This is originally a whole turkey recipe but since time is limited we are applying it on a turkey breast instead. Stuffed baked potato halves and whole baby Bella mushrooms: Potatoes and mushrooms rubbed with olive oil and dried oregano then stuffed with mozzarella and Parmesan cheeses, baked to perfection and served with roasted asparagus and baby carrots, then you can drizzle with balsamic glaze for the added sweetness Ciabatta stuffing with chestnuts and turkey bacon: cubes of ciabatta bread with sautéed onions, garlic, fresh rosemary, Italian parsley and carrots mixed with chestnuts, parmesan, and chicken broth, topped with crumbled turkey bacon then baked until bubbly. Very filling and delicious. Fresh Quinoa Salad: or in other words tabouli salad with Quinoa, this is a wonderful refreshing dish with cooked fluffy Quinoa and petite diced tomatoes, cucumbers, onions, parsley, mint leaves and extra virgin olive oil.
